These delicious, healthy bites are so easy and quick to make. And without baking. I don’t make a lot of vegan desserts, but I decided to put an end to this. Why? Because they are simply amazing!
INGREDIENTS
Coconut base:
190 g coconut flour
200 g coconut oil, melted
4 tbsp maple syrup
1 tsp vanilla extract or vanilla bean
pinch of salt
Chocolate topping:
200g dark chocolate
5 tbsp soy milk
HOW TO MAKE:
Line a square baking dish with baking paper. I used 30 x 22 cm baking dish. In a large bowl put together coconut flour, melted coconut oil, maple syrup, vanilla and salt. Mix it well together with a wooden spoon until fully combined.
Pour the coconut base mixture into the baking dish and press down until it is compact. Put it in the freezer.
Meanwhile, make the chocolate topping. Melt chocolate and soy milk in a bowl over a pan of simmering water. Stir the chocolate to help it along until it is melted. Chocolate must be smooth.
Take the baking dish out of the freezer and smoothly put the chocolate over the base. Sprinkle some coconut flour over the top. Put the dessert in the refrigerator for a least an hour to set. Before cutting the bites, let it rest at room temperature for about 10 minutes.
